This means essentially putting in a lot of twists and turns so that your customers will have to take the long way around from the door to their seat. Being generally rather agreeable, your customers really don’t mind this at all. And the extra walking time for your customers means more time for your waiters and waitresses to stay caught up on their serving cycles.
